The Meat Cutters ability to produce top quality cuts of meats to ensures that the restaurant uses its product to optimize profit so the guest receives full value in both product and service.

Food Production:

• Cutting meat accordingly to product specifications and time standards.
• Following the buffet production system to insure quality and shelf life compliance.
• Rotating cuts and boxed meat to ensure freshness( FIFO).
• Stocking and arranging the Meat Cooler according to food safety guidelines.

Cleanliness:

• To eliminate cross-contamination, sanitizes all surfaces between production of meats.
• Cleans and sanitizes the meat room according to quality standards.
• Follows local health department laws.

Operational Excellence:

• Maintain inventory of all meat products to determine the production level.
• Notifies the Manager of any discrepancies in product or equipment.
• Properly maintains equipment accordingly to the Equipment Maintenance manual.
• Performs daily duty roster and assure standards are met.
